100% first fill bourbon casks, roughly half of the batch subsequently finished for over one year in Champagne Paul Launois barriques. 100% unpeated. Non chill filtered. Natural colour. Nose of ripe mangoes, pineapple cubes, lots of honey with baked bananas, brown sugar, figs and wine gums. With time there is dark tones of creme caramel, toffee and meringues with white chocolate. The theme of honey continues on the palate backed up by linseed oil, warming spices, gingerbread, fresh pineapple, and cedar.
